Day 1: Favorite Food. This one was a tough one for me. I like so many different kinds of food! But when I narrowed it down I came up with… chips and salsa! I can never get enough. I especially like making my own salsa. I’m a big fruit and veggie person, so fresh salsa is heaven for me. This picture is of some avocado mango salsa I made. So good! You can get the recipe at Shrinking Kitchen, a great blog to follow if you are looking for healthy, different, and tasty recipes. I suggest signing up for their weekly meal plans. They email you a link to 6 dinners for the week along with their recipes, side suggestions, and a grocery list. The meals are always so tasty too.
I like to make my own chips too, and it is so easy! Just take corn tortillas and cut them into eighths (I find using a pizza cutter is the easiest way to do this). Spread them out onto a nonstick pan, brush them with olive oil and sprinkle with salt. Bake at 350 degrees for 10-15 minutes, flip, bake for another 10, let cool and eat! Good, and better for you than the fried ones.
