As I talked about in my last post, one of my new year’s resolutions is to lose weight. Almost 3 weeks in and I’m happy to say I’m doing well. 4 pounds down! I want to see bigger numbers, but I keep reminding myself that before I made my specific resolution I was not inactive and I was not eating completely unhealthily, so the pounds don’t melt off as easily as they have in the past.
There are a couple of ways I be sure to keep myself on track. One way is lunch prepping on the weekend. With the cold New England weather that has finally come to us, I love to have a warm lunch. This make lunch prep easy for me because I will make a big batch of soup for the week. I love using Pinterest to get different recipes try. You can follow my Soup Nazi board to see some of my favorites. This week I decided to go with a Paleo Jalapeno Popper Chicken Chili from Skinnytaste. I know some people can shy away from Paleo recipes, but this one does not have any uncommon ingredients in it. It is full of protein and veggies which helps me keep my energy up in the afternoon.
That is my planning, now on to my tools! I don’t know about you, but I don’t care for microwaved soup. I prefer it warmed on the stove. Well, I can’t do that at work so I was thrilled when I found out about this mini crockpot. It is a game changer! You put your soup in there, bring it to work and about an hour before lunch, plug it in. Come lunch time you have nice, hot soup waiting for you! It works really well too. This product doesn’t cook anything, just warms food. But anything you put in a regular crockpot you can put in your lunch crockpot. At $25 you can’t go wrong!
My other go-to tool is my Nalgene bottle. I try to be really conscious about my water intake throughout the day, so this helps. I am to drink 3 full bottles per day. This gives me about 100 ounces of water per day (and a few trips to the bathroom!) to keep my hydrated. There are so many different colors and styles to choose from, and they’re very durable.
